This group has the requisite weirdness that it seemed plausible someone would have a good salami recipe or crafting tips. Anyone out there ever make salami, or know how to do it? Scottpat Posted September 30, 2004 Report Share Posted September 30, 2004 Try this one. My brother made a batch last year. He cooked some in a smoker and in the oven. The ones that were smoked with apple wood were fine! Salami 5 pounds ground beef 2 teaspoons liquid smoke 1 teaspoon garlic powder 4 1/2 tablespoons curing salt 2 1/2 teaspoons mustard seed 2 1/2 teaspoons coarse pepper Knead all ingredients together. Put in a covered bowl and refrigerate 4 days. Knead for 5 minutes each day. Recover and refrigerate. On the fourth day divide in quarters, making each quarter into a roll. Bake/Smoke at 150-175 degrees F for 10 hours (or longer). Bake on broiling pan. NOTE: If you are going to smoke them do not use the liquid smoke. It will taste like you are eating an ashtray!
